mama earth's philosophy...
Chef Dani's philosophy:
I love to eat. And I eat to live. But most people don’t. Even the ones who swear they love food and live for food. You see, food comes from the earth... food is the stuff this planet gives us... food is the stuff that takes energy from the sun, synthesizes it for us and then gives us life and energy when we eat it. Food is plants.
Chlorophyll, the agent that makes plants green, is one of the most amazing things on the planet for the human body. This 'plant blood' is in fact so similar to the chemical make-up of human hemoglobin (our blood), that when we ingest plants they act as blood purifiers to the body. So if we eat lots of greens our bodies naturally begin to heal themselves and operate at their peak efficiency.
When we eat animals, particularly when they have been trapped indoors their whole lives and fed an unnatural diet of genetically modified corn and ground up leftovers from their buddies at the slaughterhouse, we become under-nourished and our immune systems do not receive all of the vitamin goodies they need in order to fight off diseases. Think of the immune system as your own personal little army. If you don't feed your soldiers, they're not going to have the energy or means to fight for you.
Furthermore, when an animal is slaughtered it releases adrenaline. That same chemical is carried into our bodies when we eat that animal, which literally accounts for elevated stress levels in the body. The more we eat this way, the more inflamed our digestive systems get and the more we get sick, because the first line of defense in our bodies is through the digestive tract. But the digestive tract cannot build immunity if all of its efforts are on mending the effects of toxicity from harmful foods. Thus, we are, in essence, poisoning ourselves with the foods we eat. There's no wonder why rates of obesity, cancer, heart disease and food allergies are higher than ever before... look at what we eat.
I say choose your poisons wisely. That is one of my philosophies. I can understand the desire to drink wine... I love it and it’s actually a living food that comes from Mama Earth... BUT... why poison yourself with high fructose corn syrup too? Why eat artificial sugar that contains excitotoxins that alter your brain? Why eat highly processed red meat that contains traces of amonia and dioxin, two of the most dangerous poisons known to man? Why eat chicken that contains antibiotics that are harmful to the human body when ingested? If you are going to eat meat, at least be informed about where it comes from. I was once a meat-eater too, and I know how to find humane sources for you, or to make the transition to a vegetarian diet a smooth and delicious one.
I have always been a huge foodie. That's why I went to culinary school. And I know how to take these amazing things like plants, grains, beans, nuts, seeds, fruits and vegetables and create gourmet fabulous food for you. If it doesn't taste good, I won't eat it. And if it doesn't taste good, I won't serve it to you. I am here to educate, to offer a hand, to guide and to listen. Do yourself a favor and eat better, in order to live life fully. I am here to help you. I will make it a littler easier for you.
Personally, I spend most of my money on food. To me, it's worth it. I've
watched too many people get sick and I know in my gut and heart that
industrialized food is inherently not good for us. Mama Earth feeds
us... this planet grows food that does crazy things like coat our
digestive tracks and feed the good intestinal flora. When we eat from
the earth, our skin starts to glow, the pounds roll off, those
headaches disappear.
If you want to
spend your food money wisely, buy organic fruits and vegetables and
cook them yourself, or have me do it for you (or show you how!) I
believe so much in the right to pure, unadulterated foods, that I will
work with you to figure out a way that fits in your budget. Look at my
options on this website or call me to figure out what best works for
you. If you eat well now, you may save on health care later.
I
also shop for you at the farmers' markets-- where organic produce is
super cheap-- because I believe in local sustainability and shaking
hands with the people who take the time to nurture those plants and
feed us.
We have a right to good food. Real food.
When you elect to buy this way and to eat this way, you elect to make this world a better place with each bite you take.
